Ingredients
  

1 medium head of cauliflower, cut into florets

1 lb ground turkey

1 cup shredded cheddar cheese

1 cup cream of mushroom soup

1/2 cup milk

1 cup frozen peas (or fresh if in season)

1 small onion, diced

2 cloves garlic, minced

1 tsp dried thyme

1/2 tsp paprika

Salt and pepper, to taste

1 cup panko breadcrumbs

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes until slightly tender. Drain and set aside.

      Cook the Turkey: In a large skillet over medium heat, add olive oil. Once heated, add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, cooking for an additional minute. Add the ground turkey, thyme, paprika, salt, and pepper. Cook until the turkey is well browned and cooked through, about 7-10 minutes.

        Combine Ingredients: In a large mixing bowl, combine the cooked turkey mixture, cream of mushroom soup, milk, frozen peas, and half of the cheddar cheese. Stir until well combined. Then gently fold in the cauliflower florets.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Top with Cheese and Breadcrumbs: Sprinkle the remaining cheddar cheese over the top. In a small bowl, mix the panko breadcrumbs with a drizzle of olive oil and a pinch of salt. Sprinkle this mixture evenly over the casserole.

              Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the cheese is bubbly.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving. Enjoy your deliciously cheesy casserole!
