Ingredients

1 lb ground beef

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded sharp cheddar cheese (for stuffing)

1 cup BBQ sauce (divided)

1/2 cup ranch dressing (for drizzling)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C).

Prepare the meatball mixture: In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until just combined; avoid overmixing to keep the meatballs tender.

Stuff the meatballs: With your hands, take a small handful of the meat mixture and flatten it in the palm of your hand. Place about a tablespoon of shredded cheddar cheese in the center, and fold the meat around the cheese to form a ball. Ensure the cheese is completely enclosed. Repeat with the remaining mixture.

Arrange in a baking dish: Place the stuffed meatballs into a greased 9x13 inch baking dish. You should fit around 15-20 meatballs, depending on their size.

Add BBQ sauce: Drizzle half of the BBQ sauce evenly over the meatballs. Reserve the remaining sauce for later.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Uncover and continue baking: After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the meatballs are fully cooked (internal temperature should reach 160°F or 70°C) and the cheese starts to ooze out.

Final touch: Once baked, remove from the oven and drizzle the remaining BBQ sauce over the meatballs. Add a drizzle of ranch dressing over the top for extra flavor.

Garnish and serve: Sprinkle chopped fresh parsley over the dish for a pop of color. Serve hot, and enjoy with toothpicks for easy eating!
