1 cup all-purpose flour

1 cup buttermilk

2 large eggs

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup buffalo sauce (plus more for drizzling)

1 cup crumbled blue cheese

¼ cup chopped green onions (for garnish)

Instructions
 

Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with cooking spray or oil.

    Prepare Cauliflower: In a large pot of boiling water, blanch the cauliflower florets for 3-4 minutes until slightly tender. Drain and rinse under cold water to stop cooking. Pat dry with a paper towel.

      Make the Batter: In a large mixing bowl, combine the flour, baking powder, garlic powder, onion powder, smoked paprika, salt, and black pepper. In another bowl, whisk together the buttermilk and eggs until well combined. Pour the wet ingredients into the dry ingredients, stirring until just combined.

        Add the Cauliflower and Sauce: Gently fold the blanched cauliflower into the batter. Then, add ½ cup of buffalo sauce and the crumbled blue cheese, mixing well to ensure all ingredients are incorporated.
