Baked Chicken Tenders with Honey Garlic Sauce

1 lb (450g) boneless, skinless chicken breasts, sliced into tenders

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried thyme

½ teaspoon cayenne pepper (optional for a kick)

Cooking spray or olive oil for drizzling

For the Honey Garlic Sauce:

¼ cup honey

3 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon freshly grated ginger (optional)

1 tablespoon cornstarch mixed with 1 tablespoon water (slurry for thickening)

Sesame seeds and chopped green onions for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Chicken: Pat dry the chicken tenders with a paper towel to remove excess moisture, which helps them crisp up in the oven.

      Set Up Breading Station:

        - In three separate shallow bowls, prepare your coating system.

          - In the first bowl, mix the flour with garlic powder, onion powder, smoked paprika, salt, black pepper, dried thyme, and cayenne pepper if using.

            - In the second bowl, beat the eggs.

              - In the third bowl, place the breadcrumbs.

                Bread the Chicken: Dredge each chicken tender first in the flour mixture, coating well, then dip in egg, and finally coat with breadcrumbs. Ensure they are evenly coated for maximum crispiness.

                  Arrange for Baking: Place the breaded chicken tenders on the prepared baking sheet. Spray or drizzle the tops lightly with cooking spray or olive oil to promote browning.

                    Bake the Tenders: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

                      Make the Honey Garlic Sauce: While the chicken is baking, prepare the sauce. In a small saucepan over medium heat, combine honey, soy sauce, minced garlic, and ginger. Bring to a simmer, then stir in the cornstarch slurry. Continue to cook until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.

                        Serve: Once the tenders are done baking, remove them from the oven. Drizzle the warm honey garlic sauce over the tenders before serving. Garnish with sesame seeds and chopped green onions.
